Menu Planner Monday Week 5

I do apologize for the delay in Menu Planner Monday. We have had the flu run through our house for the last 3 weeks. I joked that the kids usually share everything at the same time! With this virus, it decided to stick around a little longer than I would like. It has been brutal! I am happy to report that we are on the mend and hopefully can be on the wellness train for a while.

Weigh In:

As you can imagine I have been a little stressed the last few weeks. Between the kids being sick, taking unexpected days off, and my “busy” season of meetings. My weigh-in gain (-.2)n I think reflected my stress level and lack of portion control. I did eat “on plan” all week but my portions were getting a little large by the end of the week. After a great session with my nutritionist, I felt so much better. It is nice to have the 1:1 face to face support for this journey. It was the piece I was missing from the other “programs” I tried. We made a plan and I am implementing a few things this week to get me right back on track. Strategies include weighing in measuring to get my portion eyeball back into proper limits, track all food choices, and get some more exercise in. I even joined a step challenge to encourage myself to get moving more. The more I plan and make changes for a healthier lifestyle, the better I feel about my journey.

Weekly Menu Plan:

Here is my recipe roundup menu plan for the week. If you follow me on Pinterest you can see where I “store” all the recipes I want to try or have tried. There are so many great recipes that use many types of proteins and flavor profiles. Only one recipe disappointed me flavor wise but I quickly fixed it with some additional seasoning. That is a great part of working with other peoples recipes. You have a great base to build on and add your own twist to possibly make it even better. Working and experimenting in the kitchen always is a help for me to reduce stress levels and get into a better frame of mine.

Lunch:

Whole30 Instant Pot Chicken Tortilla-Less Soup from 40 Aprons: Easy recipe to make but I thought it was lacking in some flavoring. I added some salt-free Cajun seasoning to the soup and it was amazing. I am a girl who loves a little spice. 

Dinner:

Instant Pot Shrimp and Sausage Gumbo from A Calculated Whisk: Hands down my favorite recipe of the week.The dish was well received by all members of the family. I paired the gumbo with some delicious saute kale and I was in low-carb heaven!  I will definitely be putting this recipe on the monthly rotation. 

Creamy and Smoky Chipotle Pork Chops from Wholesomelicious : This is one recipe that my son loved and told me this by eating almost 2 chops by himself. The skillet sauce is what makes this dish so yummy. I had to stop myself from licking the pan……real talk. I wish the kids hated it so there would have been more leftovers for lunch.

Healthy Mom on the Run BBQ Bacon Meatloaf:  Recipe to come! I used the recipe base of the Dairy Free Keto Meatballs and added a Whole 30 compliant BBQ Sauce and Bacon to make an amazing tasting meatloaf. It was so good that I didn’t even have a chance to snap a photo of the finished product. I am going to have to recreate it so I can have a photo for when I post the recipe.

Only three recipes to share this week due to having the flu. I promise that Monday we will be back to the regularly scheduled program!
