Healthy Thai Chicken Skillet with Spicy Peanut Sauce

Taking small steps is the only thing keeping me going this week! As you can see I have not been able to post for a few days because I have been swamped with mom “work” and teacher work. If you follow me on Instagram I have been expressing my elevated “stress level” daily. As a Special Educator, there are times during the year that are extremely busy for me. It is at those times that it seems like all my paperwork is due and my meeting schedule is out of control. Compound this business with my sick kiddos and this is a true recipe for chaos. Thankfully I had planned meals like Healthy Thai Chicken Skillet with Spicy Peanut Sauce that kept my eating plan on point! 

The Recipe Inspiration:

This recipe was inspired by a recipe that I saw in the Whole30 Fast and Easy Cook Book.  This is a new book of recipes that I found and I finally had the time to look through. There are a lot of recipes I want to try. When I saw the recipe for Thai Chicken and Brussels Sprout Skillet I like to components of the recipe but felt that it needed more. The recommended Asian Citrus dressing didn’t sound like something I would like. Instead, I knew a peanut sauce would enhance the flavor and be great with the chicken and veggies. I also wanted to use more than just brussels for the vegetable base. With a few modifications, I was able to create something I love and will now be on my frequent recipe rotation.

Healthy Thai Chicken Skillet with Spicy Peanut Sauce

Healthy Thai Chicken Skillet with Spicy Peanut Sauce is a quick and easy skillet dish filled with vegetables and protein. The Spicy Peanut Sauce is lightened up using powder peanut butter, but it does not affect the peanut taste! A great option for a healthy lunch or dinner.

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 pound of cooked boneless chicken breasts, sliced thin
  • 12 oz shaved Brussels sprouts
  • 1 package of Coleslaw Mix (Found in the bagged salad section of the store)
  • 1/2 cup Spicy Peanut Sauce
  • Peanut Sauce Ingredients:
  • 6 tablespoons PB2 powdered peanut butter
  • 3 tablespoons coconut aminos (can use soy sauce)
  • 3 tablespoons water.
  • 1/8 teaspoon garlic powder.
  • ¼ teaspoon black pepper.
  • 1/8 teaspoon Sriracha


  1. In an extra large skillet, heat olive oil over medium heat.
  2. Add the Brussels sprouts and coleslaw mix to the pan. Cook, stirring occasionally, until the vegetables are tender and lightly browned, 5 to 8 minutes.
  3. While vegetables are cooking, in a medium bowl place all sauce ingredients in a bowl and whisk together until combined. Set Aside.
  4. Once the vegetables are cooked, add the chicken and heat through about 2-3 minutes.
  5. Add the peanut sauce and heat through for an additional 2-3 minutes.
  6. Remove from heat and serve.


Calories: 380 Total Fat: 17g Saturated Fat: 2g Carbohydrates: 22g Fiber: 6g Sugar: 4g Protein: 43g I used left over rotisserie chicken for an even quicker recipe.
