Last weekend my parents came to visit while I was in the middle of my food prep fest. I usually use Sundays to grocery shop and do as much food prep as I can for the week. It is extremely helpful on nights that I am completely exhausted from working in the classroom all day. The days after our long break are always the worst. I am trying to get back to routine and so are they. Having prepared food and a plan ahead of time is the only thing that keeps me choosing natural foods.
I often try to make a meal on Sunday with whatever I may have left for ingredients from the week. Last week I had a pack of mixed colored peppers, chicken drumsticks, and fresh basil still left to use. I immediately thought of Chicken Cacciatore. With my mom there I was able to brainstorm the different ingredients and the best method of cooking. I knew that I had onions and different canned tomatoes in the pantry and I could quickly throw together a dish. Since I already had a soup simmering in my favorite dutch oven, I decided to use the Instant Pot. My mom also agreed that this would be a great dish for the pressure cooker and suggested I use diced tomatoes as the “broth” base. Two brains sometimes in the kitchen is better than one! In less than 30 minutes, we had a quick healthy lunch that the whole family could enjoy.
I am so glad that I took a risk and just worked with things I had already in my kitchen. I know a lot of people have hesitation about using an electric pressure cooker, but my biggest advice is to take a risk and just try one recipe. I have had so much success with mine!
