Happy Monday Everyone!
I was lucky enough to have a 3-day weekend. Thank you to all the men and women who have served or are serving in our military. There truly is no way to truly thank you for all you do to keep our Nation safe.
I used my time off to continue to work on me. I was able to get some workouts in and enjoy some family time.
I also used my time to do some much needed food prep for the week. What I have found in my health journey is that the more prepared I am the better I eat. I know… how cliche. It is however the key in getting the results I want weekly on the scale. It only takes a few hours and makes my week go so much better.
I have on must have every week. Roasted Veggies! The veggie medley depands on what is on sale each week. No matter what I put in it always tastes amazing. To make this simple dish, I cut my veggies down to bite size pieces and place on a cookie sheet. Next, I swirl a small amount of olive oil and season the veggies with salt and pepper. Last, I roast the veggies at 425 degress for about 20 minutes (depends on how crispy you like them).
Its nice to have great tasting veggies on hand for the protiens that I cook during the week. Simple, healthy, and tasty!
