Recipe Review: Polenta Fries, Bargin Alert, and the Blogger Cookbook!

I have made a conscious effort as of late to use everything I buy. I had bought a tube of Polenta in one of my shopping trips in the last month and it was about to expire. Hmmm….what to do with this tube of yummy goodness? POLENTA FRIES!
Warning: I don’t have a ton of photos of this process!!


Baked Polenta Fries Recipe

55 min | 10 min prep

SERVES 4

  • 1 tube plain polenta
  • 3 tablespoons of olive oil
  • Kosher Salt
  • Course black pepper
  1. Preheat oven to 450*.
  2. Cut tube in half shortway, then cut the halves in half long way into 8 fry like wedges.
Using a non stick baking sheet with edges.
Drizzle the olive oil.
Arrange the wedges in one layer turning gently to coat.

Bake 25 mins, turn gently and cook 20 – 30 mins longer.

Turning more if you wish to be browned on all sides.

Drain on papertowel lined plate.

Toss with salt and pepper before serving.

Bargain Alert!
We have gotten a new grocery store in our town and it is a real hit to the Mom! I had not taken into account Ash Wednesday in my menu planning. Not really having any meat free friendly products in my freezer, I decided to see what Aldi’s had in their isles to help me out of this food dilemma. I found so many bargains, but I refocused and only grabbed on what I needed. They had a great selection of fish and of course some kid friendly foods. I rarely prepare food out of a box for the family but I was tired and this hit the spot!

Aldi’s has some great products and you cannot beat the price. For all the food pictured above I spent $15.29.

If you have never been to an Aldi’s, check it out. You would be surprised by all the bargins inside!
