The New Year has led me to renew my health vision and choices. With the help of my Trainer, Jana, we have created some personal health goals for me to focus on for the next month. I am the type of person who needs to write my goals down and do a check in daily to see how I am doing. Here are the goals I created:

Log all food no matter what it is

Get Active with at least 3 workouts a day

Wear BodyMedia Band for at least 23 hours a day

Prepare a healthy breakfast
I have been doing really well with 3 of my 4 goals. I am not great about tracking my food even though I have the best apps known to man to do it. It is simply not something that I am great at doing. If anyone has any tips, please send them my way. I will log tomorrow!
Something that I have been really great at is preparing a healthy and filling breakfast in the morning. In brainstorming ideas with Jana, we thought that a portable protein shake or egg dish would be the best thing for me to start my day with. My mornings are crazy! I first start with getting my oldest to school by 6:50. This involves me getting her up and driving her to the bus stop that is about 10 minutes from my house. When I get home, I start with round 2 with the younger 2 children and somehow manage to get to work for 8:10. I never stop to have breakfast until I get to school. This is not good! Now that I have thrown a workout before I start any of this madness, I need something to keep me going. I decided to alternate between a protein shake and egg cups. I like to have some variety because I get bored pretty easily. The shake mix I am using right now is from Vega:

Why I love it:
Pros:
- 50% daily intake of vitamins and minerals
- 15 g protein
- 6 g fibre
- 1.5 g Omega-3
- Antioxidants
- Probiotics
- Greens
- free from dairy, gluten and soy, and contains no added sugar, artificial flavours, colours or sweeteners
Cons:
- It is a bit pricey but is on sale at Whole Foods market this week
On days that a shake is not what my body craves I have started to make egg cups on Sunday to have for the week. This week I started to play around with the ingredients and think that I have found a great flavor combination with the help of some paleo ingredients. I love the concept of Paleo and am striving to make as many Paleo friendly choices as I can. Eating clean foods does make me feel more energized. These egg cups are not only delicious but keeps you energized for the morning crazies.
MOTR Sweet Potato Paleo Breakfast Cups
Ingredients:

10 Whole Eggs
-
2 Sweet Potatoes, Diced
-
1/2 large Red Bell Pepper, Diced
-
1/2 large Sweet Onion, Diced
-
1 tablespoon Coconut Oil
-
Olive Oil
-
Dash Salt and Pepper
Directions
- Preheat oven to 350 degrees. In a large mixing bowl scramble eggs gently until eggs are whipped to your desired consistency. Set aside.
In a medium skillet, melt coconut oil on medium-high heat. To skillet add sweet potatoes, onion, and peppers. Sauté veggies and potatoes until browned, about 5 minutes. Remove from heat.
Prepare muffin tin by lightly coating with olive oil. This is a necessary step if you don’t want half your eggs left in the pan. Spoon 1 tablespoon of veggie mixture into each muffin cup. Pour egg mixture on top of vegetables about 3/4 to the top of each cup. Place muffin tin into oven. Bake until eggs have cooked through about 12 minutes. Let eggs cool and scoop out of tin. You now have a portable breakfast treat.
As I say to my students, “No excuses, find a way”. I have no excuse not to eat a healthy breakfast. Preparation and planning are my keys to success.

I find that if I have to input calories, I’m really bad at tracking food so I’ve taken to just writing it down in straight up list form!

I’ve been putting a lot less time into my breakfasts lately, because I have been having trouble getting up in the morning. I think it’s because it is SO cold out. I would like to start making eggs, and stuff for breakfast on workdays like I used to.
