Who is actually having great weather these days? Here at Mom on the Run we are on our 7th snow day. This is snow like I have never seen it before. My driveway is now a snow tunnel. I like snow for the holiday season and that is about it. The beginnings of cabin fever are setting in. My kids dream of the days of wooden swing sets and the beach. At least the groundhog didn’t see his shadow. That gives me some sort of hope

Daijia’s Dish: Sausage and Peppers Sammies

Today is an exciting day for Mom on the Run. I am finally getting around to posting a recipe/creation from my oldest daughter Daijia. For those who do not know my daughter Daijia here are a few interesting facts:

She is an amazing athlete. She plays cross country, soccer, basketball, and lacrosse.

Is the best big sister. She has been amazing with the baby. When she comes home from school, the baby is all smiles.

Recently Daijia asked if she could start cooking with me so that she could learn how to make some dishes. I thought this was a great idea and it has been a new way for us to bond. Usually we share stories about our day and I get to know about what is going on in her life. In between stirring and creating, we have shared belly busting laughs and even belted out a few great songs. I cherish this time together and hope someday these become some of her favorite memories. The first recipe that Daijia would like to share would be great for a Super Bowl Party. Daijia loves pork- Bacon is probably her favorite, but sausage come is a close second. We wanted to make a dish that incorporated the yummy organic sausage we found at Whole Foods and vegetables. The smells of fall fairs filled our brains and we decided to do a play on sausage and peppers. We scoured the internet and found a great “starter recipe” for us to work with. Of course I but a little bit of Mom on the Run flair to it and made it a true Daijia’s Dish
Sausage, Peppers and Onions
Adaptation from Food Network and Giada De Laurentiis
Ingredients

1/4 cup extra-virgin olive oil

1 pound Italian turkey sausage (We chose hot)

2 red bell peppers, sliced
-
2 Cubanelle Peppers, Sliced
-
1 large Vidalia onion, sliced
-
1 teaspoon kosher salt
-
1 teaspoon freshly ground black pepper
-
1/2 teaspoon dried oregano
-
4 garlic cloves, chopped
-
2 tablespoons tomato paste
-
1 cup White Cooking wine
-
1 (15-ounce) can diced tomatoes
-
1/4 teaspoon red pepper flakes, optional
-
4 to 6 fresh Italian sandwich rolls, optional (We used Gluten Free)
Directions
Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano and garlic and cook 2 more minutes.
Add the tomato paste and stir. Add the cooking wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.
Daijia was extremely proud of her dish and the whole family gave her praise for making such a yummy dinner. In Daijia’s words, “This is a great way to get kids to eat there veggies. The peppers taste so good with the yummy sauce and sausage.” She can’t wait until she shares another great dish with you next week. I puffy heart my mini-culinary me.
