Lately I have really gone astray from my purpose of blogging. I began this blog as a way to provide healthy minded people with great tasting family original recipes or recipe finds. My writing has been clouded with giveaways and other unique opportunities that have been thrown my way (and I do not regret them one bit). Although it is fun and exciting for you my readers, I am feeling like my blogging “chi” has been thrown off. To align my focus I am bringing you an incredible new Mom on the Run recipe to hopefully bring my kitchen back to the blog.
I posted my weekly dinner menu a few posts back. Here is a recap if you missed it.

I promise to post all the recipes but I am going to start with my family’s favorite, Chicken “Parm”. My recipe is not your typical Italian Restaurant fried chicken with red sauce and lots of cheese. My recipe is a bit more healthy, but still a family friendly recipe.
Mom on the Run Chicken “Parm”

1 lb. skinless, boneless chicken breasts

3/4 cup of Panko or any other bread crumb coating (I used gluten free bread crumbs)

2 tbsp of Italian Seasoning

Olive oil spray
-
1 1/2 cups canned crushed tomatoes
-
1/2 fat free ricotta cheese
-
1/4 teaspoon salt
-
Freshly ground pepper
-
2 garlic cloves, minced
-
1/2 cup shredded low fat mozzarella cheese (I used rice cheese)

1 cup fresh basil
Preheat oven to 375 F. Rinse chicken with cold water and pat dry with paper towel. Prepare breading station for chicken. Combine bread crumbs and Italian Seasoning.
Coat each side of chicken breast with bread crumbs and set aside.
Heat a small amount of Olive Oil in a large skillet on medium-high heat. Add coated chicken breast to pan and let chicken cook on each side for about 4 minutes or until chicken becomes crisp. Remove chicken from pan and set aside.
While chicken is cooking, prepare “parm” mixture. Begin by adding basil into a food processor. Pulse basil for a few seconds or until the leaves are chopped.
Add ricotta to the basil mixture and pulse until basil and ricotta are mixed together.
Spray a nonstick baking pan with olive oil. Arrange breasts on pan, then cover with tomatoes and ricotta.
Season with salt and pepper and sprinkle with garlic, mozzarella, and basil. Bake for 20 minutes, or until chicken is cooked through, the ricotta is bubbling hot, and the mozzarella turns golden brown.
Here is chicken “parm’” amazeingness on a plate. We accompanied this chicken dish with some great tasting gluten free rice pasta and veggies.

Nice to meet you through another blogger! I love moms that are into and conscious about healthy eating for their families. So many are not, and then their children suffer. I’m single, but have lots of young nephews and nieces & sometimes just can’t believe the junk my cousins feed them.
I’ll be back for sure–hopefully inspire them to visit as well!

This sounds wonderful! I love the basil with the ricotta. Until I get some I’ll have to sub spinach, though, and use dried basil. Very unique way to make this!

Sarah, I love this chicken parm recipe! I never would have thought to bake it with the ricotta basil mixture on top. I bet that keeps the chicken nice and juicy! Delicious and innovative idea!!
