Had one of those terrible, horrible, no good, very bad days. This from one from one of my favorite children’s books Alexander and the terrible, horrible, no good very bad day. Well it has been one of those days at school. Specifics are not needed but just the fact that I may inhale a bottle of wine tonight may give you some insight to how I am currently feeling.
Barefoot Riesling- I love this wine. Doesn’t hurt the wallet and tastes so good. I love the light fruit flavor of this wine.
It just felt like it was one of those days when I am just feeling so exhausted just thinking about what I need to accomplish next. Please tell me I am not the only one to experience days like this. What do you do to let it go and de-stress?
I did have a glimmer of sunshine at my desk today. I have many fabulous creative students that blow me away with their many talents. Below is a jewelry set that was made by one of my favorite students.
She is raising money for our Washington, DC trip. Isn’t is gorgeous!All the teachers are of course supporting her in her first business venture. I told her she should create her own online store. I love my creative students.
Not all was gloom and doom
I actually was able to create my weekly food plan and grocery list tonight. This is very ambitious of Mom on the Run. Usually I procrastinate until the very last second, but for some reason I was feeling the organization itch today. Who would have ever imagine that life runs so much more smoothly when you have a plan in place? I will reveal my meal plans tomorrow because I want to double check with Dad on the Run with my choices.
Dinner tonight is another creation for my 6-week meat free Lenten Recipe collection. I was feeling like fish fry, but also for tacos. I decided to bring the two together and create fish tacos. Since I forgot the guacamole on my last Mexican inspired dish I made sure to make up for it tonight. I used my secret weapon:
I found this amazing product in the salsa isle at Whole Foods tonight. I love walking the isles looking for new food products to try. This one really intrigued me because I love the flavors of all the Frontera products. This guacamole mix was new to me and I decided to give it a try. It was as simple as adding 3 avocados to the food processor and giving it a whirl. Out came this amazing guacamole.
This makes the best guacamole. If you have not tried this packet of guac’ goodness it is a must have.
Mom on the Run Fish Tacos
4 fillets of white fish of your choice (I used tilapia because it was available)
1 cup of Gluten Free Coating Flour (I use Hol Grain Chicken Coating Mix)
1 tsp cumin
1 tsp garlic powder
1 tsp of chili powder
Grape Seed Oil
Salt and Pepper
Gluten Free Tortillas
Taco Condiments of your choice: guacamole, tomatoes, lettuce
The How-To:
Begin by preparing the fish. Pat fish dry with paper towel. Combine gluten free coating, cumin, garlic powder, and chili powder into a shallow dish. Generously coat each side of fish.
Heat grape seed oil in a large skillet. Add fish into hot oil. Let fish brown and crisp on each side.
Once fish is cooked and crispy, remove each filet from the pan. Let fish rest on a paper towel to let excess oil drain.
Cut fish at an angle. Place fish slices onto the tortilla. Fill each taco with favorite filling. Here is mine: Organic salad greens, fish, and guacamole.
Can we say slam dunk combining both my cravings together! Just what this long day ordered.

I think guacamole should be a food group itself! We love it in our house! Lately, we’ve been taking just fresh avocados and putting then right on our tacos! YUM!

I had a fish taco today too! Except the fish was fried, and I only ate the outside batter and not the fish because it was dry as heck. Heh.

I’ve definitely had those days before. Nothing that a nice glass (or bottle) of wine can’t fix. I knead bread when I’m stressed. Or bake. Talk about emotional eating.
