Dad on the Run to the Rescue

This weekend turned out to be a great weekend! I got a lot accomplished and I am feeling so much more relaxed and refreshed. These two little things made it even a little better
Dad on the Run always knows how to brighten up my day.
Unexpected bouquet of roses that will be going on my desk at work to brighten up my classroom. They are gorgeous!
Yes, peeps that is our grill being used for the first time in 2010. Dad on the Run prepared a burger bar tonight for Sunday dinner. Holy Yum! It doesn’t take much to make me smile.
Buffalo Burgers with guacamole, lettuce, and tomato. Better than any restaurant around here.
While Dad on the Run was taking care of dinner, I was able to get my lunchtime soup ready for the week. My plan this week was to make a big batch of soup so that I didn’t have to worry about making lunches all week long. Anything to make the week run smoothly is where I was at when creating this soup.
Inspiration for this soup came from the Napa Garden Homemade Dressing.
This dressing mix is the perfect spice blend for any soup. If you have not tried these dressing mixed yet, what are you waiting for?
Mom on the Run’s Napa Garden Vegetable Soup
INGREDIENTS
1 tablespoon olive oil
2 cups carrots, sliced
1 cup celery, chopped
1 cup leeks, chopped
1 cup onion, diced
1 tablespoon fresh ginger, minced
4 cloves garlic, minced
1 cup cabbage, chopped
3 tbsp of Napa Garden Dressing
1/4 cup fresh basil, chopped
4 cups water
1 teaspoon salt
Freshly ground black pepper, to taste
4 cups of Vegetable Broth
The How-To:
Coat a large pot with olive oil. Add carrot, celery, and onion sauté for 5 minutes on medium heat, stirring frequently.
Add leek, ginger, cabbage, and garlic and sauté for an additional 5 minutes until vegetables are tender and soften.
Add basil, vegetable broth, and water. Season with salt and black pepper and 3 tbsp of Napa Seasoning. Turn heat to high and bring to a boil, then reduce heat to medium low and simmer for 20 minutes.
Serve in a bowl or mug and garnish with chives.
Mission lunch time soup…..accomplished! This soup smelled so good while simmering. I had a sample to make sure that all the flavors were what I wanted them to be. I was right on with this recipe. I can’t wait until lunch time tomorrow.
