A Guest Post: Train Your Life

Hello Everyone! I have a special guest post for you today. You have probably heard me talk about my baking woes. Today’s guest poster is the person who saves me from burning cookies and baking flat cakes. Enjoy!

Bacon, Egg and Asparagus Pizza

Adapted from Eating Well (April 2010)

Ingredients

1 pound prepared whole wheat pizza dough

2 strips turkey bacon

3/4 cup sliced white onion

1 pound asparagus, trimmed, cut into 2-inch pieces

4 large eggs

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

1 cup shredded extra-sharp Cheddar

Preparation

Be sure to cut asparagus and onion prior to anything else, so they are ready when you are!

1. Preheat oven to 500°F. Coat a large rimmed baking sheet or pizza pan with cooking spray.

2.Roll out dough on a lightly floured surface to about the size of the baking sheet.

Transfer to the baking sheet. Bake until crisped on the bottom, about 8 minutes.

3.Meanwhile, cook bacon in a large nonstick skillet over medium heat until crisp. Drain on a paper towel.

Turkey bacon takes longer than regular bacon.  This is what it looks like when done.  If you prefer a crispy bacon, use the regular thing!

4.Add shallots to the pan and cook, stirring often, until beginning to brown, about 2 minutes. Add asparagus and cook, stirring, until beginning to soften, 2 to 3 minutes more.

5.Spread the vegetables over the crust and crumble bacon on top. Whisk eggs, salt and pepper in a medium bowl until combined; slowly pour over the vegetables, trying not to let any run off the crust. Sprinkle the pizza with cheese. Bake until the eggs are set and the cheese is melted, 8 to 10 minutes.

Before cooking.  If you want, you can use reduced fat cheddar.

Adventures of Mom on the Run

Mom on the Run is traveling to her Top Secret Teacher Conference. Even if I did know the details it would probably bore you. All I can say is that I get an extra two days off from work and an opportunity to build my professional teacher resume. I left Hartford with tears in my eyes as I said good-by to Dad on the Run and my girls. This is a solo adventure for me and I will miss the family very much.

With that said I leave you with the thoughts of Mom on the Run while on a train…..

As I sit here on the train from Hartford to Trenton I am thinking of all the adventures that I have had so far in 2010. I realize how much I have to live and experience in my life when I experience opportunities for the first time. Living in New England all of my life has been such a wonderful experience, but there are times that I realize though that I need to spread my wings and fly a bit more. For example my first ride on a NYC bus. My girls Mari and Mo let me experience what life is like as a NY diva. It should not have taken me 30 years to embark on that adventure. Or the current Amtrak train that I am on. This is my first long(ish) train ride that I have ever taken. I am so dependent on my car that I never think to use a train or other means of transportation. It is kind of relaxing to take a moment and sit back and not have to concentrate on driving.

Other adventures I would like to experience in 2010 (and are on schedule for this year) :

1. Attend a Blog Conference ( I just purchased tickets to Blogher ‘10 in NYC)

2. Go to Dollywood or other places in Gatlinburg, TN. This one might be so out of the blue but we were able to travel through there a few years ago and I really want to explore the beauty of the Smoky Mountains.

3. Explore the culinary world of New Orleans. We actually may have the opportunity to do this in early July.

4. Go to the edge of The Grand Canyon and not let my fear of heights overcome me.

That is just the beginning of my list. I have more things that I would love to experience but those are the things I can accomplish this year.

Meatless Fun Friday Recipes

Happy Friday!

This week has been a rollercoaster of a week. Where has all my time off gone? I did get something’s accomplished that I wanted and I did spend some of the time just doing “me” activities. Some fun (blog networking, gym classes, and retail therapy) and some not fun (doctor appointments and house cleaning). I am trying to get ready to leave for my business trip in New Jersey. Truth be told I am having mixed feelings about leaving the family. I don’t leave very often and when I do it is for less than 24 hours. This trip is Sunday-Tuesday. Let’s hope I come home to the house in one piece (Dad on the Run will do a great job).

So today begins the first Friday of the Lenten Season. What this means in the Mom on the Run house is lots of “creative” meatless meals. My good friend LK over at Healthy Delicious has some great meatless Friday dishes. I am following her lead and posting some of my favorite meatless dishes of my own on Friday’s.

This first recipe is a Mom on the Run Household Favorite. I have many different versions that I make of this recipe. Basically what goes in this dish is whatever I have available in the pantry.

Taco Salsa Casserole

By: Mom on the Run

This Mexican themed recipe will please even the pickiest eaters. Serve with a side of tortilla chips for even a bigger crunch.

Ingredients:

1 Jar of Newman’s Own Medium Chunky Salsa

4 Cups of Cooked Rice

2 Cups of Meat Substitute such as soy crumbles

1 can of Refried Beans

1 Can of Kidney Beans

1 Cup of Frozen Corn

1 cup of Shredded Cheddar Cheese

Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 8

Instructions:

1. Preheat oven to 375 degrees. Heat/brown meat substitute in a large skillet on medium-high heat.

2. Add the salsa and the refried beans to the skillet. Stir until all ingredients are mixed well together.

3. Next, add the corn and beans. Stir together until all ingredients are mixed together and cooked through about 10 minutes.

3. In a 13 X 9 glass Pyrex casserole dish place cooked mixture and spread into an even layer. Add a thin layer of the cheese on top of this mixture.

4. Scoop cooked rice on top of salsa mixture. Sprinkle shredded cheese on top of rice and let casserole cook for 20 minutes or until dish is heated through.

6. Serve hot with side of Tortilla Chips.

This is a simple but very tasty meal. The only thing missing from this great dish is a side of guacamole.
