Go Saints Vegan Peanut Butter Cups!

As some of you might know my dear husband is originally from Louisiana. This is a huge for him- The Saints are in the Superbowl!! We are getting ready for a Super Sized Superbowl Party-well just Sunday Dinner turned into a football smorgasbord.
I wish I could be as original as a favorite blogger of mine Amanda over at Fake Ginger who made Saints themed sugar cookies. Aren’t those so cute?
No instead a stole a recipe page from Averie over at Love, Veggies, and Yoga. I decided to make Averie’s (Raw if You Want) 3-Ingredient, 10-Minute Vegan Peanut Butter Cups.
I was attempting to make a black and gold type of desert and settled for this sort of brown and gold concoction. Who really cares because these peanut butter cups are amazing!!
Ingredients:

1 box of Baker’s Chocolate (Averie’s Note: (Melted Baker’s Brand Chocolate because it’s dairy-free, or melt 1/2 c Chocolate Chips, or a Cocoa Powder/Agave/Coconut Oil Mix)

Peanut Butter (I used Earth Balance Peanut Butter because it is Vegan)

Cupcake Liners (I used the mini-ones)
The How-To:
Melt chocolate in a small sauce pan on medium-low heat.
Once chocolate is melted pour a small amount into the bottom of a cupcake liner.
Spoon the peanut butter on top of the chocolate.
Spoon another layer of chocolate on top of the peanut butter and let cups refrigerate for at least one hour to harden and set.
There you have the simplest but tastiest desert on the planet. It is hard not to sample one right away! Thanks Averie for this great recipe
Off to make more party food- actually Dad on the Run is on kitchen duty tonight. He is making organic spareribs and chicken wings. I am in charge of the veggies (roasted brussel sprouts) and a side dish (red beans and rice). I won’t have to cook for a few days

I just made those! Well I didn’t make them vegan. I used 60% cocao chocolate. They were SO good!
mmm, these look perfect!! I love that Earth Balance PB too, it’s really tasty. I need to try making these sometimes. I’ve seen them done so many times and pb and chocolate is my favorite combination. What am I waiting for?!

those homemade peanut butter cups look dangerous to me. Seriously. I would have to have a party to bring them to, otherwise there would be no way I could keep them around. So cool that you made them yourself though!

Ah, so the Saints won…hm…don’t even really know who they are actually, tee hee, except what I learned here.
