A Homemade Giveaway

You would think with some vacation time I would be less busy. This is never case! I think what doesn’t help is that everyone here at the Mom on the Run house is on a different schedule. Some of us have school vacation (Tajiah and I). Dad on the Run and Daijia are both on regular schedules. This means that I am running to and from Daijia’s school more and entertaining Tajiah by myself. All in the good times of Mom on the Run :)

Yesterday I was on cooking detox after my whirlwind brunch making on Sunday. I was in my Body Pump class and I thought about what could I make without too much effort. I asked the girls what they wanted while we drove home from the gym. In unison they shouted, “MEATBALLS!!!” That is when I realized that I had a new product that I have been dying to utilize in an Italian recipe, Homemade Dressings.

When I was granted a sample of Homemade Dressing to incorporate into recipes I was very excited, because this product meets the Mom on the Run stamp of approval (gluten free, all natural, and full of flavor).

Each Homemade Dressing flavor offers many ideas for kitchen use besides just a really great dressing for salad. The Homemade Dressing website offers many great recipes that range from poultry to fish. With the Lent season coming up I am really excited to make some of the fish dishes that they have on there.

I decided to use the Italian Homemade dressing to enhance the flavors of the Mom on the Run Meatballs. I am always adding something new to my meatball recipe, but I think with this flavor additive the recipe maybe complete :)

Mom on the Run Meatza Meatballs

Ingredients:

  • 1 pound of Lean Ground Turkey (or whatever ground meat your family enjoys)
  • 1/3 cup of Gluten Free Bread Crumbs
  • 1 egg
  • Salt and Pepper
  • EVOO for browning

The How-To:

Preheat oven to 375 degrees. Add all ingredients to a large bowl.

Use your hands to well incorporate all ingredients.

Roll meat mixture into balls. The amount of meatballs will depend on how big you like them.

Add a little EVOO to the bottom of a hot skillet. Add meatballs one at a time, turning frequently until all sides are brown.IMG_3878

Place browned meatballs on a baking sheet. Bake meatballs for another 10 minutes or until your meatball internal temperature is 170 degrees. Serve over pasta. We used corn pasta for the first time. Pretty Tasty!

The family love the meatballs. The Homemade dressing seasoning made such a difference in the meatball taste.
