The tree is finally done. We had a few three mishaps with the tree falling and causing a major disaster of broken ornaments and lights. I realize I need to take a better picture than this because there is a weird blur from the lights but I am in love with this years tree. Yay for happy moments :)

Speaking of happy moments…. I was able to replicate a childhood favorite of mine this weekend that is too delicious for words.

VEGAN BROWN RICE CRISPY TREATS!! Can you tell that I am excited. I wanted to share the recipes with all my foodie friends because these Rice Crispy Treats are AMAZING!

Simple Brown Rice Crispy Treats

Modified from Dani Spies

Ingredients

  • 3/4 cup of all natural almond butter
  • 2 tablespoons of Virgin Coconut Oil
  • 1 cup of brown rice syrup
  • 6 cups of Gluten Free brown rice crispy cereal
  • 1 teaspoon vanilla extract
Directions

Put coconut oil into a medium-sized saucepan and heat over medium heat.

Put you’re peanut butter, rice syrup, and vanilla into a small sauce pan and heat over a low heat until the mixture becomes warm and syrupy…this will only take a few minutes.

While your peanut butter syrup is heating, spray a large bowl with cooking spray before adding the rice cereal.

Pour the ooey gooey peanut butter syrup over the cereal and combine until all of the rice crispies are evenly coated (you may have to work it a little).

Transfer crispies into an 8×8-baking dish (like a Pyrex) that has been lightly coated with non-stick cooking spray.  Pat them down and make them nice and even, pop in the fridge about an hour or so, then cut em’ up and enjoy!

I may never go back to making rice crispy squares the “old” way because these have so much flavor. The almond butter added a nice nutty flavor and some added protein. I found that these were also much easier to work with. Less mess and really no sticky hands and the best part the girls loved them.
