I have been very fortunate to receive many samples from some great companies since starting my blog journey. My goal is to find and educate Mom’s and my loyal healthy readers about great new products. Today I have a great product find for you!!!!

It is really nice to have an all natural no-calorie alternative for soda. About time!!! My family and I had the opportunity to sample all the flavors thanks to my Zevia friend Ian. He was generous enough to send Mom on the Run a sample pack for the whole family to try.

Although we have enjoyed all the flavors we each have our Zevia Flavor Favorites!!!

Mom on the Run- I love the Natural Cola. I love the real cola nut flavor. Not too sweet, but just sweet enough.

Dad on the Run- He loved the Root Beer. As an avid root beer float drinker, he thought this root beer did the float justice!

Daijia- She loved the Black Cherry. She will now be leaving Dr. Pepper on the shelf and switching to this great alternative.

A Chance of Rain with a Side of Chipotle Meatloaf

It was another rainy/gloomy day in Connecticut. The weather has been really interesting this summer but we have made the best of it. Here is what I harvested from our garden today.

I was pretty psyched to start having fresh veggies to work with. I will be having fresh cucumber with my sandwich tomorrow!

With the gloomy day came my culinary inspiration for tonight’s dinner. I wanted something that I could prepare and than forget about it. I took a Mom on the Run Favorite, Stuffed Meatloaf, and made it into a spicy, smokey masterpiece. Well as much of a masterpiece meatloaf can be.

Spinach Stuffed Meatloaf

Adapted from Williams-Sonoma Essentials of Healthful Cooking

1 1/2 lbs lean ground beef or turkey
3 – 4 tbsp worchestire sauce
1/4 cup parmesan cheese
2 Egg Whites
10oz pkg spinach, well drained
1/2 cup low fat mozzarella
1 can of Chipotle Salsa
1 cup of Panko Bread Crumbs 1 tbsp of Paprika 2 tbsp of Dijon mustard

Pre-heat oven to 350 degrees.
Line a cookie sheet with aluminum foil leaving at least 1 inch hanging over the long side. Brush the foil with 1/2 teaspoon of olive oil. Spray 9×12 cookie sheet with .IMG_2068
In a bowl mix together ground meat, worcestershire, egg whites, salt, pepper, mustard, paprika, and parmesan until all has been blended.

Spread meat mixture into the prepared cookie sheet to make an even layer. Cover the plan with plastic wrap. Refrigerate for 1-3 hours.

Once meat has chilled, layer defrosted spinach, ricotta, and mozzarella evenly onto the meat.

Lifting the foil along the long side facing you, roll up the meat and stuffing like a jelly roll, pushing it forward a bit at a time and lifting the foil away, until the long log has formed.

Pat the log gently to compact it. Brush it with a little bit of EVOO and center it on the pan.

Bake the meatloaf, unconvered, until meat thermometer reads 160 degrees in the center or about 1 hour. Pour Chipotle Salsa over meatloaf and let bake for a few more minutes or until the sauce cooks through.

Here is my dinner plate. Don’t you wish the screen was scratch and lick? Everyone in the family loved this new meatloaf creation. My husband went so far to lick the plate.

So now onto what I am calling zucchini madness. My garden is finally staring to produce some vegetables! I am always overwhelmed by the amount of summer squash and zucchini that my plants produce. Here is one recipe that my good friend Amanda gave to me and I finally tried it on my own.

“Fried” Zucchini and Summer Squash Crinkle Fries

Adaptation from Prevention Magazine

Ingredients:

  • 1/4 C olive oil, divided
  • 2 lg egg whites (I used Egg beaters)
  • 3/4 C plain trans-free panko bread crumbs (I used a Chipotle Style to add a kick)
  • 3 tbsp grated Parmesan cheese
  • 3/4 tsp salt-free Italian herb seasoning
  • 1/4 tsp salt
  • 2 med zucchini (about 12 oz total), halved crosswise and then cut lengthwise into 1″ wedges (16 total)
  • 2 med summer squash

Directions:

Preheat oven to 425 degrees F. Brush 17″ x 14″ jelly roll pan with 1 tablespoon of the oil (or use 2 smaller rimmed baking sheets, brushing each with 1/2 tablespoon of the oil, and switch positions of pans halfway through baking). Cut zucchini and summer squash into pieces. I used my fancy crinkle cutter to add some fun to the cutting process.

Mix egg whites in shallow dish and beat lightly. In another shallow dish, mix panko, cheese, Italian seasoning, and salt.

Dip zucchini in egg whites, one at a time, letting excess drip off. Roll in crumbs, pressing them so they adhere. Arrange close together but not touching on prepared pan. Drizzle with remaining 3 tablespoons oil.

Bake without turning, 25 to 30 minutes, until zucchini is crisp and golden.

My girls called these vegetable fries. They were very addicting. I like the crunch that baking them this way created. For me the crunchier the better!
