Spring brings busy times to our house. Ballet rehearsals, end of the  school year activities, and road race season does not leave a lot of time at home. I decided despite the girls track practice, I was going to cook a home cook meal. IMG_1449 Tajiah and DH running at a race!

My husband actually taught me a lot of my cooking skills. When we first started dating he actually did a lot of the cooking because I could do things out of a box, but nothing he would consider “real” food. One of the first recipes that he taught me to make is what he simply calls Fiesta Pork. This is probably the tastiest and easiest recipe I have in my recipe rotation. It is perfect if you want a hearty meal in a short amount of time. I was also able to incorporate a few product finds that I have had the pleasure of tasting.

Ingredients:

4-6 Lean Boneless Pork Chops with visible fat trimmed

1 Jar of a High Quality Salsa (I used Your Mom’s Salsa- More about this product later in the recipe!)

Oil of choice (I used a little EVOO)

Salt/Pepper

Cooked Rice (I used Lotus Foods Madagascar Pink Rice)

The Easy Preparation:

I had a box of Pork Loin Chops in my freezer from one of our shopping trips to Omaha Steaks. When they have one of their clearance sales you can get some great deals.

I defrosted the chops and gave them each a sprinkle of salt and pepper.

I than trimmed the fat from the chops and cut them into bite size pieces.

I heated the EVOO in a large skillet and browned the pork chop pieces until browned.

Once the pork chops are browned add the jar of salsa and let sauce simmer on low for about 10 minutes.

Tonight’s Salsa was courtesy of Your Mom’s Salsa. As the jar and website warn “Can be addicting”. I love Salsa and cannot pass up a homemade batch of the stuff.  This salsa did not disappoint. When looking at the background and story of this company I was so impressed. This is truly an All-American company with a mission to feed families all natural good tasting food.

This salsa is chunky and tasty which makes it a great match for this dish.

As the pork is simmering I prepared the rice.

Madagascar Pink Rice

This rice is truly pink! The kids loved that.

Simple but a palate pleasure.

It feels great to be back on the cooking food wagon and I will be sure to be adding new recipes all week. Mom on the Run is back!
