I have had the unique opportunity to work with a new food partnership between the Food Network’s Robin Miller(also a mom of 2) and Tyson Foods. Robin has been working on some fantastic recipe demo videos that show how to make, quick, easy and delicious family meals using Tyson Heat ‘N Eat Dinner Meats (which are fully cooked, seasoned products that come in different, delicious sauces). This is exciting news for a mom who has entered her busy Spring season.
Jamie, an account executive who does Public Relations for this venture, thought that Mom on the Run would be a great place to experiment with these new recipes. She was nice enough to send me coupons to try the Tyson Meal of my choice . I opted for the Chicken Puttanesca that is ready from start to finish in 15 minutes.
Here is the recipe:
Chicken Puttanesca with Olives and Capers
Recipe Courtesy of Robin Miller and Tyson Foods
Recipe serves 4
Preparation Time: 15 minutes
Time Savings: 30 minutes compared to traditional recipe
Ingredients
8 ounces angel hair pasta
1 package (17 ounces) Tyson® Chicken Breast Medallions in White Wine & Garlic Sauce
1 can (14.5 ounces) petite diced tomatoes, undrained
½ cup quartered pitted kalamata (Greek) olives or pimento-stuffed olives
1 tablespoon drained capers
Pinch salt and ground black pepper
¼ cup chopped fresh basil, optional
Preparation Instructions
-
Cook angel hair pasta according to package directions. Drain and cover with foil to keep warm.
-
Empty contents of Tyson Chicken Breast Medallions in White Wine & Garlic Sauce package into a large saucepan or high-sided skillet.
-
Add tomatoes, olives and capers and set pan over medium-high heat. Bring to a simmer, reduce heat to low and simmer 5 minutes.
-
Remove mixture from heat and season to taste with salt and ground black pepper.
-
Transfer pasta to a serving platter or individual plates and spoon chicken mixture over the top. Garnish with basil if desired.
Here is the step by step video from Robin herself.
So the verdict on this meal: Fantastic. I love that it only took 15 minutes and I had a complete meal. It was so good that I forgot to snap a picture of the final product.
