Day 13: The South Beach Diet

I never thought that I would make it this long. I wish I would have started to blog on Day 1 to compare my feelings from then to now.

Well how am I feeling you ask? I am actually feeling great. I have lost about 8 pounds (I sneaked a peek at the scale early). I can definitely feel the difference in my clothes. I am wearing a pair of pants that were very snug at the beginning of the month and now they are comfortable to wear again. Thank goodness because this mom does not have extra cash for new clothes right now.

I think there have been a few factors in my success:
  1. Planning- I have planned my meals on a weekly basis and have stuck to the plans. I have used a Excel Spread Sheet to document my eating. Email me if you are interested in the tracker. I have found it incredibly useful to keep me on track.
  2. Exercise- I love my Wii for the Personal Weight Loss Coach. It is probably the best 29.95 I have ever spent. I also returned back to Spin Class at my gym LA Fitness. I thank my friend Kristin all the time for introducing me to this class. It is one of the best cardio excerises I have done. On Sunday alone I burned 580 calories!
  3. Determination- I am doing this for me this time. I want to be healthy so I feel better in my own skin. 2009 is my YEAR!
  4. Great new recipes!!!!! Here is one my favorites: Cauliflower Mash Potatoes. I know probably most people have had them but I was reminded how easy they are to make.

Here is how I make them:

Ingredients:

1 Head of Cauliflower
1/4 cup of FF Half and Half
1 tablespoon of Trans Fat Free Butter Substitute
Black Pepper

First I clean and cut the cauliflower head into smaller pieces. I than steam the cauliflower in the microwave until it is tender and soft to the touch.

Next, Put the steamed Cauliflower, half and half, butter, and pepper into a food processor for a whirl.

Pulse until “potatoes” are at the consistency that you desire. Eat hot!
