Pizza Time and many other Great Treats!

I have been quite the foodie the last two days. I have taken a mini-break from my own kitchen to explore other local culinary cuisine.

My journey started yesterday with dinner. We were running late from an appointment and I took a family vote about what we should eat. The winner was pizza. I tried a new pizzeria near where the appointment was. The restaurant was very busy with take out orders and I was pleased to see the crowds, as this usually means great food! I ordered a large veggie pizza and it was fantastic. We found the pizza had just the right amount of everything on it. Gino’s Pizza is a real keeper!

A Lenten Feast!
I was up early this morning and decided that I was feeling eggs. I made myself an egg beater omelet with cheddar. I used Arnold’s Sandwich thins(these are great for an egg sandwich).

Dinner:
I was feeling Mexican and since I am going on a detox diet this week I thought why not. We went to my favorite Mexican Restaurant in our area, Puerto Vallarta. The atmosphere is family friendly, the food is amazing, and it does not cost a mortgage payment to eat there.

We started with the chorizo nachos.

I could not decide what I wanted so I went with a combination platter of a taco, enchilada, and chili relleno.
I was a bad girl and had a XX Beer!
I had a ton of leftovers and this meal was great. When I arrived home I found a foodie package in my mailbox. Can you guess what is in the box?
I guess you will have to wait until tomorrow!!

Recipe Review: Polenta Fries, Bargin Alert, and the Blogger Cookbook!

I have made a conscious effort as of late to use everything I buy. I had bought a tube of Polenta in one of my shopping trips in the last month and it was about to expire. Hmmm….what to do with this tube of yummy goodness? POLENTA FRIES!
Warning: I don’t have a ton of photos of this process!!


Baked Polenta Fries Recipe

55 min | 10 min prep

SERVES 4

  • 1 tube plain polenta
  • 3 tablespoons of olive oil
  • Kosher Salt
  • Course black pepper
  1. Preheat oven to 450*.
  2. Cut tube in half shortway, then cut the halves in half long way into 8 fry like wedges.
Using a non stick baking sheet with edges.
Drizzle the olive oil.
Arrange the wedges in one layer turning gently to coat.

Bake 25 mins, turn gently and cook 20 – 30 mins longer.

Turning more if you wish to be browned on all sides.

Drain on papertowel lined plate.

Toss with salt and pepper before serving.

Bargain Alert!
We have gotten a new grocery store in our town and it is a real hit to the Mom! I had not taken into account Ash Wednesday in my menu planning. Not really having any meat free friendly products in my freezer, I decided to see what Aldi’s had in their isles to help me out of this food dilemma. I found so many bargains, but I refocused and only grabbed on what I needed. They had a great selection of fish and of course some kid friendly foods. I rarely prepare food out of a box for the family but I was tired and this hit the spot!

Aldi’s has some great products and you cannot beat the price. For all the food pictured above I spent $15.29.

If you have never been to an Aldi’s, check it out. You would be surprised by all the bargins inside!

Crock Pot Roasted Chicken!!

I have another whirl wind week. The abridged version of the story is I have been to 4 different doctors. I have been so stressed about my health as of late and I think I am finally on the right track. Enough about this as it is a whole different blog entry.

I made another yummy crock pot dinner. Whole Chickens are always a great deal at any grocery store and I stock up when I have room in the freezer. For a family of four this is a cost friendly menu for under 10.00! Who doesn’t love that!!

Roast Crock Pot Chicken

Ingredients:

  • 5 lb whole roasting chicken
  • olive oil cooking spray
  • Seasoning Salt (I used Italian Seasoning, salt, pepper, and Tony’s Spicy Seasoning)
  • chopped onion
  • garlic
  • aluminum foil

Directions:

Spray crock pot and chicken with olive oil spray.
Roll wads of aluminum foil into balls and place in bottom of crock pot.


Sprinkle chicken with seasoned salt.


Insert onion and garlic inside cavity of chicken.


Put chicken back side down on top of aluminum balls.

DO NOT ADD WATER OR ANY LIQUID.
Cover and cook on low for about 10 hours.

Skin will actually turn brown as in a deli roasted chicken.

I complimented it with roasted asparagus and some rice pilaf.
I am so satisfied with this meal. What a success!
